Yuan Wang: Development of Plant-Based 3D Printed Scaffolds for Bovine Satellite Cell Maturation in Cell-Based Meat Production

Description
This study developed a 3D-printed plant-protein scaffold for bovine satellite cell culture. Plant-protein inks were characterized for flow behaviour and extrusion printability, followed by fabrication of lattice scaffolds and assessment of their stability in DPBS.
The inks exhibited shear-thinning behaviour and temperature-dependent viscosity, enabling extrusion-based 3D printing. Printed lattices retained their visible structure during seven days of incubation in DPBS. Bovine satellite cells attached to the scaffolds and displayed F-actin organization, while Live/Dead staining indicated the presence of viable cells.

PrestoBlue measurements further showed increasing metabolic activity over seven days of culture. These results demonstrate that 3D-printed plant-protein scaffolds can provide a stable, food-compatible platform supporting early bovine muscle cell growth, with future work focusing on myogenic differentiation and maturation.</p>
