Raw dataset on the structural characteristics and immunomodulatory activity of pectin from steam-exploded pear pomace

This dataset contains the raw data associated with the article entitled “Pectin from pear pomace exhibits good immunomodulatory activity after steam explosion treatment.” The data were generated to compare the physicochemical properties, structural characteristics, and immunomodulatory activity of pear pomace pectin before and after steam explosion treatment.The dataset includes data related to the extraction, purification, characterization, and immunomodulatory activity evaluation of pear pomace pectin.

Specifically, it contains structural and physicochemical measurements, including pectin yield, residual protein content, decolorization rate, purification profiles, degree of esterification, molecular weight, monosaccharide composition, spectroscopic analysis, and morphological observations. It also includes in vivo immunomodulatory activity data, such as serum inflammatory cytokine levels and gut microbiota profiles in mice.
