Dataset and MATLAB-based computational tools for optimization of a probiotic Cupuassu (Theobroma grandiflorum) cremogenate

The experimental data were carried out using a central composite design and response surface methodology to assess the influence of probiotic biomass, inulin concentration, and homogenization time on physicochemical, rheological, colloidal, particle-size, and microbiological properties.
