SalahiSol: The Solar-Steam Rehydration System — A Deployment and Impact Data Set for Global Food Security

Listed in Teesside University Research Data Repository

Hunger in the modern era is rarely a question of scarcity in the absolute sense.

Description

Global agricultural output is, in most years, sufficient to feed the world's population several times over. What separates a harvest from a meal is a chain of logistics: storage, transport, and final preparation, each of which can fail independently and each of which has, historically, failed millions of people at once.

The Global Report on Food Crises for 2026 recorded 266 million people across forty-seven countries experiencing acute food insecurity in the preceding year, a figure that has more than doubled over the past decade. The State of Food Security and Nutrition in the World, published the same year, placed the number of people experiencing moderate or severe food insecurity at 2.1 billion, with nearly 2.7 billion unable to afford a diet that meets basic nutritional standards.

These numbers describe a system in which food frequently exists but does not arrive, or arrives too late, or arrives in a form that cannot be safely eaten given local conditions of water, power, and infrastructure. Dehydration has long been recognized as one of the more effective responses to the transport half of this problem. Removing moisture from a food product halts the biological processes, bacterial growth, mold formation, and enzymatic decay, that cause spoilage, and it does so with a dramatic reduction in weight and volume.

A dried product can be shipped further, stored longer, and moved through supply chains that have no capacity for refrigeration. This document does not treat dehydration as a novel finding; it is well established in both commercial food processing and humanitarian logistics. What is addressed here instead is the second half of the chain, the point at which dried food reaches a community and must be restored to an edible state, quickly, safely, and without dependence on infrastructure the receiving community may not have.

This is the function the SalahiSol system is designed to serve.
